Red Grape Juice Marinated Grilled Chicken Salad
How to make it
- Marinate the chicken: In a bowl, whisk together the red grape juice, olive oil, balsamic vinegar, garlic, salt and pepper. Add the chicken breasts, coating well. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for best flavour).
- Grill the chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting excess drip off and grill for 5 -7 minutes per side, or until fully cooked. Remove and let rest before slicing.
- Prepare the vinaigrette: Whisk together the red grape juice, olive oil, apple cider vinegar, salt and pepper in a small bowl.
- Assemble the salad: In a large salad bowl, toss the greens, cucumber, cherry tomatoes, red grapes, cheese and nuts. Top with sliced grilled chicken.
- Dress and serve: Drizzle the red grape vinaigrette over the salad, toss lightly and enjoy this refreshing, fruity summer dish!

For the marinade:
- 1 cup Rietfontein Red Grape for extra flavour
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 chicken breasts, pounded to even thickness
For the salad:
- Mixed salad greens
- ½ cup cucumber, sliced
- ½ cup cherry tomatoes, halved
- 1⁄4 cup red grapes, halved
- 1⁄4 cup crumbled feta
- 1⁄4 cup sliced almonds or walnuts (optional)
For the red grape vinaigrette:
- 1⁄4 cup Rietfontein red grape juice
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- Salt and pepper to taste
